3 ounces small red onion, very thinly sliced (about ¼ of a small onion)
1 tablespoon + 1 pinch Dude Food Fire Mon Ami spice blend
2 tablespoons white balsamic vinegar (or other fruit vinegar of choice)
3 tablespoons extra virgin olive oil
1 teaspoon kosher salt
1 teaspoon + 1 pinch fresh ground black pepper
6 cups seedless grapes, sliced in half
8-10 leaves of fresh basil
8-10 leaves of fresh mint
¼ cup packed leaves of fresh Italian flat leaf parsley
¾ cup + ¼ cup feta cheese crumbles, very dry (about 5-6 ounces if buying already crumbled)
6 cups seedless watermelon cut into 1-inch cubes (about 2 pounds cut)
In large bowl, add red onion, 1 tablespoon spice blend, vinegar, olive oil, salt, 1 teaspoon black pepper, and grapes. Refrigerate for 30 minutes to 1 hour.
With the fresh herbs, remove stems and finely chop together. Add to bowl with onions.
In the bowl with the onions, add ¾ cup feta cheese, watermelon chunks, and juice of the watermelon that remains after cutting (or in the container if you buy precut). Lightly toss to mix and transfer to serving bowl.
Just before serving, sprinkle remaining feta cheese, remaining spice blend, and remaining black pepper.
